Cochin Masala Chai
Cochin however first came to prominence during the rule of the Portuguese around 1530. Their empire at the time was one of the world's most powerful and under their tenure Cochin developed into a very prosperous trading centre. After the Portuguese came Dutch rule in the mid-17th century, followed by the British, and finally, after Indian independence, Indian rule.
Based on an ancient recipe developed in the city centuries ago, this fabulous chai exhibits all the flavor and character of the vibrant port city, as encountered by the ancient sea-faring traders of old. A stunning tea by any measure, we recommend brewing this one piping hot, and adding a splash of warmed milk (if possible), and a dash of sugar to really bring the mélange of spices to the fore. ***** Love my chai, yes I do. While I'm blessed to have Chai Carts in the streets of San Francisco making real chai, most places use that fast-food sugar stuff and just add hot water. What is that? No wonder everyone is fat. No, good chai means bringing it to a boil slowly and adding the milk.
